We mixed our 400 old trees with more than 2000 new ones. We always follow carefully the olive groves which sell us olives, checking the whole process from pruning to harvest (as we are doing in Morganti grove in Offida, Ascoli Piceno, with around 2500 olive trees).
Our harvest begins on the second half of October and usually lasts around 15 days. We use both hand and electric tools to pick the fruits.
Olives are always processed within 36 hours from their picking, cleaned up from leaves and branches and washed in running water. We examine closely the whole process, from cleaning up to times and temperature of extraction.
Once the oil must is got, we stock, filter and bottle it with care.
